How do I print the human readable text below the barcode?

Barcode Creator just creates the barcodes, not the text.  But this is FileMaker and that means we can print anything we want anywhere we want it!  So thats what you do.  You can easily place the field that contains the text over the container field with the barcode, give the field a white background and position it where you want.  See below.
